In the US, most pumpkin seeds sold are actually dehulled with industrial machinery in China. But instead of using complex machines and global supply-line chains, try growing Chris Homanics’ ‘Emerald Naked Seeded’ pumpkin and produce seeds that are hulless from the start! Unlike most other pumpkin cultivars which have a fibrous seed coat, this variety has been bred to have a thin pliable seed coat which greatly improves the edibility of this oil-rich seed crop. While this variety is primarily grown for its choice edible seeds, the flesh can also be used like a normal pumpkin or squash.

Each fruit holds a pile of green gems which are packed with nutrients and high-quality culinary oils. Naturally low in carbohydrates, these snackable seeds make a highly addictive superfood. Around 40% oil and 25% protein, they are a good source of vitamins B3, K, and E, carotenoids like lutein and zeaxanthin, and critical elements like magnesium, manganese, iron, phosphorus, and zinc. Zinc is especially important as it is known to bolster the immune system, including against viruses like Covid-19. Low on the glycemic index, they are a safe dietary addition for diabetics. Diets rich in pumpkin seeds are implicated in lower incidences of certain cancers, improved urinary function, prostate health, and more.

Known as pepitas in Spanish and long used in the Americas, pumpkin seeds are culinarily versatile and can be prepared in a myriad of delicious recipes. Try a traditional recipe like Oaxacan mole verde (green mole) or pipian sauce which use pumpkin seeds as a base. Seeds can also be blended into a nut-butter-like spread, which is even better and healthier when they’re sprouted ever so slightly first. They can of course be chopped and added to breads and cakes. And they make an incredible snack raw, or when simply toasted alone with a little oil and dash of sea salt.

Seeds can also be cold-pressed into a fine oil similar to olive oil for salad dressing, desserts, light frying, or as a finishing oil. The oil has the unique and beautiful property of being dichromatic meaning that it will appear either green or red depending on how thick the oil is while light shines through.

Hulless types of pumpkins first appear on the written record in the 1870s coming out of the Styria region of Austria, where they’re known as Ölkürbis (translated as “oil squash”). Though knowing the great value native peoples placed on the squash seed, both nutritionally and medicinally, it is certainly conceivable that there were traditional pumpkin varieties that expressed semi-hulless or occasionally hulless-seeded fruits here in the Americas.

Widely adaptable, tolerant of poor growing conditions, and durable against even strong disease pressure, ‘Emerald Naked Seeded’ pumpkin has been selected under dry-farming conditions. It’s resistant to both powdery mildew and black rot. Plants tend to set numerous fruits per plant, each weighing from two to eight pounds. It’s best to pick pumpkins as the vines are dying down but before hard frosts. Fruits may still have a greenish appearance in the field but will become solid orange to beautifully striped when ripe. Hulless seed quality improves from at least a month of after-harvest ripening indoors.

The story of this pumpkin begins with Ken Ettlinger of the Long Island Seed Project (LISP). It represents the power of maturing an interbreeding mix or grex of many diverse cultivars of the same species. Ken had spent years collecting all the naked-seeded types he could find, mass crossing, and selecting new forms. From that work, he created two separate populations one which represented the best of that mix and another called ‘Little Green Seed’ which was developed from a fine flavored disease-resistant pumpkin called ‘Baby Pam’. A fellow market farmer friend and seed saver named Holly Dumont of central California had requested seed of both populations. Over the next two seasons, she interbred both and selected her favorites. It was from this grex that Chris then spent three more seasons intensively improving the pumpkin for a number of desirable traits.

The result is ‘Emerald Naked Seeded’ — a new variety that out-yields most on the market, including ‘Styrian Hulless’ and ‘Lady Godiva’. Besides selecting plants that have a high yield of hulless seed pumpkins, selection has been made for fruits that have the highest seed to fruit weight ratio, plump seeds, and in which the seeds are easy to harvest from the cavity. Fruits with an attractive visual appearance have been preferred so that the grower knows when their fruits are mature. Finally, since sprouting in storage is a known problem with naked seeded pumpkin cultivars, efforts have been made to cull this trait by storing stock fruit for at least two months. This population still has a mix of bush and vine types.

Our seed comes directly from the breeder himself, Chris Homanics of Head, Hands, Heart Nursery and Seed in Washington state.

GROWING TIPS: Due to the hulless nature of the seeds, naked-seeded varieties are naturally more susceptible to rot, especially in cooler more northerly climates. Therefore, It is best to either direct-sow only when the soil temperature is at least 70F or to sow these seeds for later transplant in 50 count trays. Transplant after the danger of frost has passed at first true leaf. Plant on 5 ft centers.

Very nearly the perfect frother for all your basic frothing & mixing needs

There are a lot of middle-of-the-road frothers out there. I've been through a few of them in my recent search for something that could mix and froth well, without taking up any more outlets in my basement kitchen. Of the three Maestri frothers I've tried so far, this one wins the race by a nose. Most recently, these Maestri frothers come in basically three versions: A single-speed @ 8000 RPM, a two-speed @8000/5500 RPM, and this stepless variable-speed version. Aside from that, the only real difference in recent version pack-outs is which attachments they come with. Look over the reviews of the single-speed version and you'll find that while it can and does froth well, it starts at a single, high speed and gets there fast. This makes it pretty easy to spin liquid right out of most common cups and mugs. There is a two-speed version, but it's harder to find, only comes in one color (Grape Purple), and while it's much better than the Maestri single-speed, it still has a couple of quirks that make this variable-speed version win out. This mixes and froths whole milk, half-and-half, or heavy whipping cream, or just about anything else very well. Like all frothers, it takes a little time to learn its nuances and nail down the technique, this will definitely get you there. The best feature of this is easily the speed control. Turn the knob to turn it on at a low speed that's great to get things started, then turn the knob to crank up the speed just enough to do what you need, whether that's mixing or frothing. The low starting speed makes it easy to keep things under control without undue spilling, and the max speed is more than enough to make quick work of getting your froth on. There are really only two complaints I have with this stepless, variable speed version: - I'd really like to have a Press On / Release Off button in addition to the Speed Control knob. More than one time have I gone to turn this off, only to spin the knob the wrong way and crank the speed up to ludicrous, sloshing liquid on the counter. Being able to turn it Off just by letting go of the button would be quick and easy. This configuration would allow using a preferred speed right from the start, while still allowing speed to be adjusted on-the-fly when needed. - Give it a bigger battery. It would cost mere pennies to give this a 2000mAH+ instead of a 1200mAH battery, and I can't think of any reasonable downside to that. - Give the motor a little more torque. It's fairly easy for the current motor, at any speed, to get bogged down in a thick protein powder mix, or when pressing the frother or other attachment a bit too hard into the bottom or side of the frothing container. A bit more "oomph" would prevent that. I really like the overall design and features of thes Maestri frothers better than many other, cheaper versions. This variable-speed version is pretty great as it is and probably the one I would recommend over the single- or two-speed, for most people. But I often find myself using two hands -- one to hold it steady, and the other to turn it on and tweak the knob to the desired speed(s) -- for a device that should arguably need only one hand to use. Just a couple of minor tweaks as noted above would make this the overall best frother of its type that I've used.

Hands down, the BEST handheld frother I've ever used! I got the black one, but any color will have the same results. Over the past 12 years or so, I've used so many different handheld frothers and they've ALL fallen short of expectations for quality, longevity, power, features, and usability. I've used everything from cheap, $15 models to $50+ models and everything in-between. Some with fancy attachments for various types of mixing, frothing, beating, whipping, etc. Some with rechargeable batteries, some without. Some AC powered, some with fixed whisks, some with detachable/replaceable whisks, some with stands, etc. NONE have been spectacular. Most broke within 6 months and got tossed. ALL were major disappointments in the end, including the "revered" Zulay models of which I tried several. I finally found this Maestri House branded, variable speed frother with detachable / replaceable whisks and got one to try. I was literally on Cloud Nine the first time I turned it on. Like, WOW! Not only was it FAST on the highest speed, but it was powerful enough to churn right through milk, eggs, cream, etc, without bogging down like many others. This thing makes milk froth like a milkshake and Matcha Lattes like nothing else I've ever experienced. I used to have to sift my Matcha, then whisk it in hot water, then froth milk and then blend them together to make the perfect latte. and if the milk was cold (my preference), pre-whisking in hot water was a must to avoid lumps. However, with THIS frother? I literally pour my milk into a tall tumbler, drop in un-sifted Matcha powder, and spin up the Maestri House frother at first on a medium low speed to get it mixed, then jump straight to the highest speed to really whip that milk and match up. After about 30-45 seconds, I've got the thickest, richest, smoothest, most aerated latte around. And NO LUMPS at all!!! What a time and dish saver! And cleaning? I just run it under hot running water to get the shaft cleaned and then spin it up in a dish with hot running water for a few moments, then spin it on high for a few seconds in the air to dry it off instantly. Now, I'll be honest here, too. The specs say it can go months on a charge, using it for a couple minutes a couple times daily. Well, I guess it could do that and still spin. But I use it FULL SPEED, churning hard for at least a minute a couple times per day. After about 2 weeks, I can start to notice a speed reduction so I just plug it back in on the charger. All things considered, this is still better than all the other handheld frothers I've used over the years. After using the heck out of this thing for the past 7 months, I've even decided to start selling these in our Japanese gift shop. The manufacturer is has been very responsive both in customer support (I called them about an issue I thought I was having, and they called me back with a couple hours even though I didn't leave voicemail when they didn't answer right away) and in reseller support. I have to give these guys an A+ for responsiveness and quick resolution when problems might arise. HIGHLY recommended!!

Still The Best Frother Ever!

I love how it is easy to use, how it holds a charge, and how much power it has. I've only charged it once since I got it & I've been using it on a daily basis!!! Though it isn't a long time, I'm happy with it so far! I definitely will recommend it to anyone looking for a great frother. If you are looking for one, look no further! You won't be disappointed! I've read some comments where they found it to be too strong that their drink spilled everywhere. But for me I have not had any incident of spilling over. I have used it both for my coffee and my matcha tea and it worked great without any spilling over. You just have to start with the lowest power and ensure that you have a large enough container to have a room for your frothing. My sister tried to use it recently during her visit to make us matcha tea. However, she experienced spillage all over the cup, because she had used a small cup. Otherwise, she liked it very much and said she will get one when her battery operated one stops working... Another thing I like about the product was the customer service that I had received. When I got my first order which came quickly, it wasn't working after having charged it over 24 hours. It was not turning on at all. I returned it and ordered a replacement which I received within a day or two. This time after charging it for the recommended amount of time, I was a bit skeptical when I turned it on. However, I was pleasantly surprised that it worked like it was supposed to and it has been working ever since having charged it only once so far. I may come back and give an update depending on how it does after 6 months of use, so keep in tune... I don't know if there is a way to write a new entry as a follow up to the old entry, so I'm going to add my follow up comment over here. May 23, 2025 - I love my frother more than I can say in words. It's functionality has not changed a bit from the time I have purchased it. It charge lasts several weeks to few months before I charge it again and the power is still the same. Recently I decided to buy another one for my office use. I like the white color and so tried it but that one wouldn't even turn on. And then I got a gray one to have a different color. That one was much weaker than the black one I own. Then I replaced it with another gray one within few days. I tried it and it was exactly the same as the one I already replaced. So then I decided to go with a black one again hoping that it would be the same as the one I have. The black one did much better than the gray ones in the strength or power of the frother. However, it is weaker than the one I already have been using since last August. While I am not very happy with the quality being inconsistent in all of the ones I have tried including the recent pictures of the black one, I have decided to keep the black one because it is relatively better than the gray ones I tried. What I don't understand is why there is inconsistency in the quality of the same product by the same maker. I am beginning to wonder if the black one I purchased in Augusta last year was anomaly of a quality and a good way. Maybe I lucked out on my older black frother, but I'm unsure if quality is going to get better if I were to order another one. I have a sister who is a pro in making coffee drinks and she was the reason I had ordered this frother to begin with. She uses a battery operated one at this time and I have been thinking about getting her one like mine. While I am still skeptical, I am going to give it a shot and order her one sometime soon. If it doesn't work, I guess we will return it back. But one thing that I am grateful is that I have been able to return every one of those that I have tried recently with no issues. I hope that I don't have to return my most recent purchase in black. I was not even able to review the new purchase because of the item being the same color which is crazy.
